The dough hook attachment to our winning KitchenAid Pro Line Series 7 Quart Bowl-Lift Stand Mixer makes kneading dough easy and effortless—except sometimes when we're initially mixing the wet and dry ingredients. Often a layer of flour on the very bottom of the bowl just sits there while the loose mixture of flour and liquids above it is too thin to get caught on the dough hook and simply sloshes around. For this reason, some recipes recommend using the paddle attachment to start mixing and then switching to the dough hook once a rough dough is formed. You can also simply stir the ingredients with a spatula or other tool first. Or you can save on cleanup and do what we often do: Use the dough hook itself to stir the ingredients manually.
After placing your wet and dry ingredients in the mixer bowl, hold the top of the dough hook in your hand and simply drag it down the sides and along the bottom of the bowl. Continue to scrape the sides and bottom, turning the bowl, until the components are mixed and the dough just starts to come together. Now you can place the bowl on the stand mixer, insert the dough hook into the mixer, and knead away.
I am generally happy with my Kitchenaide mixer. But today I mixed up a batch of sweet roll dough using the dough hook and 10 cups of flour. I added the milk/butter/egg mixture to the flour/sugar mixture while it was on the machine, on the slow setting. After a few minutes, the dough looked much too moist so I added more flour bit by bit. I also scraped down the sides to be sure flour was integrated but because of the dough hook, I could not get my scraper to the bottom of the bowl. When the dough was kneaded and I took the bowl off the machine, it turned out that there was still a bunch of unincorporated flour at the bottom of the bowl! I kneaded it in by hand and I think it will all turn out fine.
But do I need to take the bowl off the machine and scrape the bottom when I'm kneading dough? A while ago I adjusted the screw at the front of the machine because the beater was hitting the bowl near the bottom. Is there any way to test whether the machine is appropriate adjusted for the dough hook?
How to Knead With a KitchenAid Dough Hook
Kneading dough not only mixes the ingredients, it also increases its elasticity, allowing the yeast to do its job, and leads to the formation of gluten, a binder that ensures bread does not fall apart during baking. Although necessary, kneading bread dough is a laborious process that will lead to sore wrists and an exhausted baker. A bread-dough hook, one of the attachments available for KitchenAid stand mixers, does the kneading for you to ensure your bread rises correctly and comes out chewy and delicious.
Pour all of the dry ingredients, including the yeast and minus 1 cup of flour, into the KitchenAid stand mixer's 5-qt. metal mixing bowl
Attach the KitchenAid stand mixer’s bread-dough hook attachment and raise the metal bowl by pulling the handle on the side of the machine to the up position. Turn mixer onto "Speed 2" for 15 to 30 seconds. This will initially mix all of the dry ingredients. Do not turn off the Speed 2 setting at this time.
Add all of the wet ingredients called for in the dough’s recipe to the mixing bowl slowly. Allow these liquids to blend into the dry ingredients for no more than two additional minutes.
Add 1/2 cup of the remaining white flour slowly to the bowl. Allow this first 1/2 cup to become well incorporated, and then add the second 1/2 cup of flour remaining.
Allow the bread hook to mix the dough for two minutes before turning off the machine and scraping the sides of the bowl with a spatula.
Turn the KitchenAid stand mixer back to the Speed 2 setting and knead the bread dough until it begins to form a ball and adheres to the bread-dough hook. Once this occurs, continue to mix the dough at Speed 2 for an additional two minutes.
Turn off the KitchenAid mixer, pull the kneaded bread from the hook with your hand, deposit it into the bowl, and lower the bowl from the raised position by turning the metal handle on the side of the unit to the down position. The dough is kneaded and ready to be baked.
