Just past the extraordinary seasonal floral displays of the Bellagio Conservatory and Botanical Gardens is another extraordinary space with displays of another variety: breakfast. Sadelle’s at The Bellagio is the Las Vegas outpost of the New York City original, and although its menu includes its top items like a fish tower and fresh bagels, the most noticeable difference is the endless amount of space: about 10,000 square feet. But despite the cavernous size, the room is a happy, light-filled den. The walls and ceilings are bedecked in a celadon hue; an array of seating options include deep-green bar stools, high-top tables, banquettes, rattan chairs, and—our personal favorite—leopard print chairs. Who eats here?
Sadelle’s is open 18 hours a day and serves lunch and dinner in addition to breakfast (which is served all 18 hours.) So the crowd tends to consist of hotel guests, anyone looking for a sit-down breakfast, and those who’ve come to splurge for a big brunch. Let's talk beverages. Bloody Marys and Champagne cocktails can be customized with different spirits. There’s also good wine and beer, along with house drinks, including a particularly brunchy one made with cold brew and vodka. Main event: the food. Give us the lowdown—especially what not to miss.
Order Sadelle’s signature: the tiered tray of fish and a bagel tower with tomatoes, cucumbers, capers, and dill. But not to be missed are the danishes from the rolling pink dessert cart. If you’re looking to really want a "Vegas" version of breakfast, add traditional caviar service. Other menu offerings include eggs Benedict, omelets and avocado toast. This is a showy, splurgey brunch where food and ambience share the spotlight. If you’re seeking a simple breakfast, look elsewhere.
