Easy Tomato and Cucumber Salad is a simple, colorful, and packed with fresh flavor. It’s a great way to enjoy tomatoes and cucumbers in-season, and who’s complaining about those calories??

How Many Calories Are In This Tomato and Cucumber Salad?

There’s just 29 calories in each cup-sized serving! You can eat a TON of it, and you’ll want to!

The secret is a simple lemon juice, salt and pepper dressing. Passing on a creamy dressing keeps the calories super-low, and lets the fresh produce flavors shine.

What Ingredients Do I Need?

  • tomatoes
  • onion
  • cucumber
  • lemon juice 
  • fresh basil leaves
  • salt
  • pepper

Tomatoes come in all shapes and sizes, and you can use any of them in this salad. You want about 24 oz. of tomato, total. That’s four average-sized garden tomatoes, eight roma or plum tomatoes, or cherry tomatoes. 

If you’re using cherry tomatoes, don’t add them to the salad whole. Cut them in half so they share their juiciness with the rest of the salad.

Red or white onions are a great choice for the salad. Red onion adds color, and both tend to have a more subtle flavor than yellow varieties. Yellow onions work too, especially if you’re fine with a lot of onion flavor.

If you’re using pre-chopped onion, you’ll need around one cup.

Lemon juice can be freshly squeezed or bottled. You’ll need one lemon’s worth, or two tablespoons.

Fresh basil leaves are in the produce section year-round, if you don’t grow your own (or know somebody who does). 

If you have left-over basil, don’t worry! There are lots of ways to preserve it for use in other recipes.

Salthelps tomatoes taste their best. Table salt’s fine, or get a little fancier with sea salt. 

Pepper adds a little spark, and ties all of the ingredients’ flavors together. Use fresh ground for excellent pepper-y flavor and a nice look.

How Do I Make It?

Chop the tomatoes. If your tomatoes are very ripe and juicy, cut them in half and squeeze out some of the extra moisture before chopping. Too much liquid in the salad can wash away flavor.

Chop the onion. Slice or dice them any way you like. A good rule of thumb is that the finer onions are cut, the stronger their flavor will be throughout the salad.  

Chop the cucumber. Peeling and de-seeding the cucumbers first is optional. Their skins and seeds are edible, and nutritious. Still, de-seeding and shaving the skins to make stripe-y cucumbers looks pretty cool.

Tear the basil leaves. Basil can be delicate, so tear gently. Throw away stems.

Juice the lemon if you’re using fresh juice. An average-sized lemon yields enough juice for the recipe. 

Stir it all together. Add salt and pepper to taste, and pop it in the fridge. These mixing/storage bowls are great for salads that need refrigerating.
